The chickpea flour is rich in nutrients, vitamins and fibres and it is fat and cholesterol free. This flour is often used for particular diets such as gluten-free, vegetarian or vegan diets thanks to the its high content of nutrients. In many Italian regions, the chickpea flour is used to make the traditional 'schiacciata',such as the 'farinata' from Liguria cooked in wooden oven.

How it's made The chickpea is an annual legume that does not require particular climate conditions but it can adapt to many soils and it does not need much water. Lu Stazzu makes this flour after having picked the chickpeas in summertime. Once dried out the chickpeas are finely grinded with specific machines which are able to keep the nutrients of the legume. Once grinded, the flour is sifted and packed.

The chickpea flour is used in many regional recipes. Used for the production of brittles or deep fried with extra virgin olive oil, the chickpea flour is used to make the tasty 'farinata' or 'panissa', both Ligurian dishes. The farinata is a dough made with chickpea flour and cooked in the oven, while the panissa is a savoury pie with onions on top.
