The beef meat for tartare is made only with selected and guaranteed meat from adult cows. The meat has already been chopped by hand using a specific knife, so it shows a medium grind. No blender is used to chop the meat, so as not to loose the juices and the nutrients of the meat. The tartare is chopped by the butcher after the best cut has been picked, which is the sirloin. The meat is then immediately vacuum-packed to guarantee the properties and the freshness of the meat which can last up to 30 days. The tartare is served seasoned with extra virgin olive oil, capers and egg yolk.

How it's made The beef meat for tartare comes from a cut of the adult bovine, specifically selected for the production of the tartare, which is simply raw meat chopped by hand. The sirloin is the biggest part of the bovine's leg that does not show any fat or impurities. It is chopped with a knife in very small cubes before being vacuum-packed. Once delivered to your home, open the bag, season the meat as you prefer and enjoy the freshness of this incredible meat.
Storage The product is vacuum-packed. If kept in fridge, it is possible to consume it even after 20-30 days from the purchase.

The beef meat for tartare is usually seasoned with medium-fruity extra virgin olive oil, egg yolk, capers, Worcester sauce, pepper and if you like, also some shaved Parmesan cheese and truffle. Suggested wine: pas opere Bellavista. Still wine: Chardonnay Monte Alto.
