Castello della Sala Muffato della Sala is a sweet white wine produced by the famous Antinori winery, located in the Umbria region of Italy. This wine is produced in the Castello della Sala vineyard, a 500-hectare area located near the Tiber River, between the provinces of Perugia and Terni. The soil in this vineyard is rich in clay and limestone, with a temperate climate that favors the ripening of the grapes. Muffato della Sala is a blend of several grapes: mainly Sauvignon Blanc, but also Grechetto, Traminer and Riesling. The uniqueness of this wine lies in the production process: the grapes are left to dry on the vine until November, a time when "noble rot" (Botrytis cinerea), a fungus that causes the sugars in the grapes to concentrate, giving the wine its characteristic sweet taste, develops. After harvesting, the grapes are gently pressed and the resulting must is fermented in small oak barrels. The wine is then aged in barrels for a period of 18 months, followed by an additional 12 months in bottles. This aging process gives Muffato della Sala a complex structure and an aromatic bouquet rich with notes of honey, exotic fruit, vanilla and nuts. Muffato della Sala is a wine that pairs perfectly with fruit-based desserts and dry pastries, but can also be enjoyed as a meditation wine. Because of its sweetness and complexity, it is a wine that can age well, improving with age.
