The soil is mainly clayey, with the presence of sand and gravel, rich in skeleton and with a good presence of minerals. The grapes used to make Avignonesi's Nobile di Montepulciano DOCG are mainly Sangiovese, known locally as Prugnolo Gentile, which must make up at least 70 percent of the blend. Vinification involves maceration of the grapes for at least 15-20 days at a controlled temperature, followed by malolactic fermentation.
