Florio's Passito di Pantelleria DOC is a highly prized sweet wine produced on the island of Pantelleria, located between Sicily and Tunisia. This volcanic territory, beaten by the winds and kissed by the sun, is characterized by a unique microclimate that contributes to the creation of wines of extraordinary intensity and complexity. The vineyard from which this wine comes is cultivated using the Pantelleria alberello method, an ancient and traditional training system recognized as a UNESCO World Heritage Site. The vines, of the Zibibbo (or Moscato d'Alessandria) variety, are planted in small basins dug into the volcanic soil to protect them from strong sea winds and to encourage the accumulation of water. Production of Florio's Passito di Pantelleria DOC begins with the harvest, which takes place between late August and early September. The grapes are harvested by hand and left to dry in the sun for about 20-30 days in order to concentrate the sugars and aromas. Next, the dried grapes are pressed and the resulting must is fermented in temperature-controlled stainless steel tanks. After fermentation, the wine is aged in bottles for at least 4 months before release. The result is a sweet, aromatic and persistent wine with notes of candied fruit, honey, apricot and citrus fruits, and a slightly bitter aftertaste typical of the Zibibbo grape variety. Passito di Pantelleria DOC Florio is a wine that pairs perfectly with fruit-based desserts and dry pastries, but it can also be enjoyed as a meditation wine on its own to fully appreciate its complexity and richness of aromas.
