Pinot Noir Peter Zemmer

Pinot Nero Rolhüt Peter Zemmer is a wine produced with 100% Pinot Noir grapes grown in the higher lands, about 450 meters above sea level, that provide an optimal technological and aromatic maturation of the grapes. Pinot Noir is destemmed and fermented in temperature-controlled stainless steel tanks. The reassembling process ensures the transfer of dyes and aromatic compounds from the skins to the fermenting must, at a temperature of 26-28 ° C for about 8 days. Then the wine is separated from the skins and placed aging in oak barrels and barriques used few months before the blending and the bottling. The wine has to rest in bottles for a period of 3 months before being released.
Storage: To be stored at 16-18°C
Pairing: Pinot Nero Rolhüt Peter Zemmer is an elegant and medium-bodied wine, excellent matched with red meat dishes not too spicy, perfectly match with Alto Adige Speak and pasture cheeses, also to the medium-long aged ones.
