Trentino Alto Adige is Italy's most Northern region and is almost entirely mountainous. Traditional Trentino products come mostly from the valleys which run through the region. The most important valley is the Valle dell'Adige which links Merano to the Riva del Garda towns where apple-growing and wine-growing are definitely the most important trades producing exceptional wines like Ferrari Trento DOC, Franz Haas and Peter Zemmer Pinot Noir and fantastic wines from Elena Walch. The most famous Trentino's food product  is the speck, loved all over the world, but cheese from Sesto, a small village on the Dolomites at an elevation of 1200 asl, is also very popular. Here mountain pastures graze at an even higher altitude, delivering cheeses with unique flavours and aromas.


Haderburg winery was founded in the mid-70s when the Haderburg family decided to start making wine from the grapes that were sold to other wineries, up to that time Haderburg were great vinegrowers and producers of apples. The production of Haderburg is directed immediately to the champenois method wines from Chardonnay and Pinot Noir called Blauburgunder in Trentino. Haderburg intends agriculture as a deep respect for the environment and nature, including the plant cycles and the seasons never trying to force the natural rhythms, this means work as in biodynamic agriculture. The vineyards lie in two main estates, the Hausmannhof which is 400 m above sea level near the town of Salorno is where Haderburg wines ages so in Hausmanhof there is the wine cellar and the house of the family. A second estate is called Obermairlhof, purchased in the early 2000s, covers 2.9 hectares of vineyards it is at an altitude between 620 and 700 meters above sea level wonderfully exposed.
