Prosecco Valdobbiadene Superiore DOCG di Cartizze Col Vetoraz is one of the most prestigious and recognized wines from the Veneto region of Italy. This wine comes from the heart of the Prosecco production area, a hilly area between the provinces of Treviso and Venice. The Valdobbiadene area is characterized by a mild climate, with not too harsh winters and warm but breezy summers. The soil is mainly clay and limestone, rich in minerals that give the wine its unique characteristics. The Cartizze area, in particular, is considered the most prized for the production of Prosecco, thanks to its sun exposure and the particular composition of the soil. The vineyards of Col Vetoraz cover an area of about 30 hectares, located at an altitude of 400 meters above sea level. The vines are cultivated according to the "pergola" method, which yields high quality Glera (the Prosecco grape variety) grapes. The production of Prosecco Valdobbiadene Superiore DOCG di Cartizze Col Vetoraz follows a very precise process. After harvesting, which is done manually between late September and early October, the grapes are gently pressed. The resulting must is then left to ferment at a controlled temperature in stainless steel tanks. This is followed by a second fermentation, called "presa di spuma," which takes place in autoclaves according to the Charmat method. This process lasts about 30-40 days and allows to obtain the typical fine and persistent perlage of Prosecco. Refinement of the wine takes place in the bottle, for a period of at least 3 months, during which the wine acquires its definitive organoleptic characteristics. Prosecco Valdobbiadene Superiore DOCG di Cartizze Col Vetoraz has a brilliant straw yellow color with greenish reflections. The nose offers an intense and complex bouquet, with notes of apple, pear, peach and white flowers. The palate is fresh, elegant and well balanced, with a pleasant mineral note. This wine pairs perfectly with appetizers, fish and seafood dishes, but is also excellent as an aperitif. Thanks to its versatility, it can be enjoyed on any occasion.
