Next, the grapes are dried on racks for a period of 4 to 5 months, during which they lose most of their water and concentrate their sugars. After drying, the grapes are pressed and the resulting must is slowly fermented at a controlled temperature. The wine is then aged in oak or steel barrels for at least a year before being bottled.
