Rottensteiner Gewurztraminer Cancenai is a wine produced with Gewurztraminer grapes grown at Termeno, on a hill southwest facing Cancenai, from which it is named the cru. These top-quality grapes are taken to the winery after manual harvest for a gentle press. The musts are treated in the absence of oxygen to avoid oxidation of any kind that could spoil the aromas of the wine Rottensteiner Gewurztraminer Cancenai. The musts ferment in thermoconditioned steel to about 17 ° C for 10 days, after which the Rottensteiner Gewurztraminer Cancenai stays on its lees until the spring after harvest before bottling.
