Jermann Sauvignon is a very elegant wine. Grapes are hand-harvested and brought to the cellar for the pressing. Musts are clarified and inoculated with selected yeasts. Fermentation takes place at a controlled temperature in order to help the aromas to develop. After the fermentation, wine is refined by extended lees for 5 months in steel tanks before being bottled.

Terroir I vigneti di Sauvignon di Jermann sorgono su suoli composti da marne e arenarie che stratificate costituiscono quello che in Friuli chiamano le Ponche". Questo terreno è tendenzialmente sabbioso quindi ottimo per lo sviluppo degli apparati radicali delle piante e ricco di elementi minerali; il clima mite e temperato presenta discrete escursioni termiche tra giorno e notte che permettono alle sostanze aromatiche di accumularsi nel grappolo. I vigneti di Jermann sono coltivati con forme di allevamento a controspalliera con potatura a guyot e cordone speronato in relazione al tipo di varietà."
