Slinzega Gordonese Quintino is a typical Lombardy product and a variant of the Valtellina bresaola. The piece that is used for the production of this salume is the same as the bresaola, it differs however in the size of the cut, which in this case is smaller. Another factor that differentiates it is the flavoured brine that is used during the massaging of the piece of meat, before drying. Slinzega Gordonese Quintino is dark red in colour and totally lean and rich in protein. Its taste has a strong hint of seasoning derived from the herbs used during salting. Easily digestible product.

How it's made The production of the Lombardy Slinzega is similar to that of the bresaola, once the piece of meat to be used for the production of the salami has been chosen, it goes through salting where a brine with salt, cloves, garlic, pepper and bay leaves is used for the Slinzega. After 10 days of salting, the sausage is dried, where the meat continues to be massaged, and finally matured in cool, ventilated rooms. The maturing process lasts up to 30 days.
