|How it's made||The Neapolitan sauce is made with Piennolo del Vesuvio's cherry tomatoes. The tomatoes are picked when fully ripened, washed, cooked and then centrifuged with specific machines. The resulting sauce is a special passata: sweet, tasty and with a good acidity. The passata is then enriched with olives, capers and oregano to increase the flavour and especially the sweetness of this special sauce. Once cooked, the sauce is pasteurized in order to make the product sterile and to guarantee its freshness during its shelf-life.|
