How it's made Milk is inoculated with milk enzymes calf rennet is added. Once the curd is obtained, it is broken in two separate moments to obtain the size of a hazelnut. The extracted paste is then placed in the characteristic fascere and stewed to give the right degree of acidity. The wheels are cold salted. The influence of the land, especially the proximity of Lake Como, favors the formation of molds in the rind and consequently the enzymes produced by the microflora contribute to the maturation of the paste, making it soft, flavorful and more easily digestible.
