The history of this cheese is deeply linked with the Taleggio Valley. Today the production area also covers the region of Veneto and a few areas in Piedmont. Shape's weight is between 1.7 kg and 2.2 kg. Rind is washed, orange-coloured with the peculiar nuances given by the grey mould. The texture is soft and moist. How it's made | Milk is inoculated with milk enzymes and then added to the calf rennet. Once the curd is ready, milling occurs in two different stages until it reaches the size of a hazelnut. The extracted texture is then laid in the traditional moulds and dried out to give the right amount of acidity. Once cold, wheels are salted. |

Taleggio is traditionally paired with polenta. Excellent with pears, apples and figs at the end the meal. It is suggested to enjoy this cheese with a glass of Franciacorta or medium-bodied red wines like a Pinot nero from the Po's south bank in the Pavia area.
