Taleggio: formaggio a pasta molle tipico lombardo

The history of this cheese is deeply linked with the Taleggio Valley. Today the production area also covers the region of Veneto and a few areas in Piedmont. Shape's weight is between 1.7 kg and 2.2 kg. Rind is washed, orange-coloured with the peculiar nuances given by the grey mould. The texture is soft and moist. How it's made Milk is inoculated with milk enzymes and then added to the calf rennet. Once the curd is ready, milling occurs in two different stages until it reaches the size of a hazelnut. The extracted texture is then laid in the traditional moulds and dried out to give the right amount of acidity. Once cold, wheels are salted.

Combinations

Taleggio is traditionally paired with polenta. Excellent with pears, apples and figs at the end the meal. It is suggested to enjoy this cheese with a glass of Franciacorta or medium-bodied red wines like a Pinot nero from the Po's south bank in the Pavia area.
