These grapes are grown in the Piano di Montevergine vineyards, located at an altitude of about 500 meters above sea level. This elevated location, along with the region's temperate climate, allows the grapes to ripen slowly and develop a wide range of aromas and flavors. The production process of Taurasi Piano di Montevergine Feudi di San Gregorio begins with the harvest, which usually takes place in November. The grapes are then destemmed and fermented in stainless steel at a controlled temperature. This is followed by maceration on the skins for about 20 days to extract maximum color and flavor. After fermentation, the wine is aged in French oak barrels for about 18 months.
