Three Milk Lari vegetable rennet by Family Busti is a Tuscan cheese made from sheep's milk, goat's milk and cow's milk, This cheese is aged in tufaceous caves in the town of Lari. This cheese is a product of long aging, is yellow tending to ochre with chalk paste, the rind has a black color due to the use of charcoal. Vegetable rennet from the cardoon is used, which makes it suitable for a vegetarian diet. This cheese is excellent when eaten pure, accompanied by a good, medium-bodied Tuscan red wine.
