Artisanal panettones are a traditional Christmas sweet bread loaf from Milan. The traditional artisanal panettone is made with very simple ingredients: water, flour, butter, eggs, candied fruit, raisins, orange and citron skin in same amount. Gabriele makes the panettone with fresh and natural ingredients. For this reason this artisanal panettone has a short shelf-life of around one month, while industrial panettones can last for more than 7 months. The traditional panettone is incredibly easy to digest thanks to its 48-hour resting time and the two leavening times. Thanks also to the mother yeast, the panettone is very soft and easy to digest, typical features of fresh products of haute patisserie.

How it's made To make the traditional artisanal panettone, it is necessary to make different doughs with flour, eggs and sugar. By making different doughs, these can leaven more uniformly and they will be easier to digest. The first dough rest for more than 12 hours so that the mother yeast has time to start working. The next day the ingredients for the second dough are added to the first one which are: butter and the traditional ingredients for the panettone such as raisins, candied citron and orange. Finally the panettone is cooked in the oven paying attention to its temperature; an over-cooked panettone will be too dry. Gabriel from Superpan does not use any preservatives, that is why the shelf-life of his artisanal panettones are short, around one month.
Storage In a cool place. Being a totally natural product with no preservatives, it is suggested to consume it within 20 days.

Combinations

The artisanal panettone is excellent with a glass of Passito or Moscato d'Asti. We suggest to heat the panettone for around 10 minutes so that the butter can melt and makes the panettone even tastier.
