The milk is heated and inoculated with milk enzymes, then coagulated with natural rennet. The paste is processed by hand and placed in molds for aging. This cheese is a seasonal product, available between the months of August and February, with aging lasting 3 to 6 months in cool, damp cellars, where the cheeses are turned regularly and washed with brine, helping to develop the rind and improve the taste. |
