Valpolicella Ripasso Bosan Cesari is a red wine produced in the Valpolicella region, located in the province of Verona, Veneto, Italy. This area is famous for producing high quality red wines, thanks to its temperate climate and the presence of limestone and clay soils that give unique characteristics to the grapes grown here. The vineyards of Valpolicella Ripasso Bosan Cesari are located in the hills, at an altitude between 150 and 250 meters above sea level. The grapes used to make this wine are mainly Corvina, Corvinone and Rondinella, with possible additions of other native varieties such as Molinara. These grapes are cultivated with care and attention to ensure the highest quality and best express the terroir of the area. The production process of Valpolicella Ripasso Bosan Cesari begins with the harvesting of the grapes, followed by fermentation in temperature-controlled stainless steel to best preserve the aromas and flavors of the grapes. Next, the wine undergoes the ripasso process, which involves fermenting the wine again on the skins of Amarone, another famous wine from the area, to give the wine more structure, complexity and depth. Aging takes place in wooden barrels of various sizes for a period of at least 18 months, during which time the wine acquires additional aromatic nuances and stabilizes naturally. The result is a wine with a deep ruby red color, complex aromas of red fruits, spices and floral notes, and a full, smooth and persistent taste. Valpolicella Ripasso Bosan Cesari pairs perfectly with meat dishes, aged cheeses and traditional Veneto dishes, such as pastissada de caval, but it can also be enjoyed on its own, perhaps with good conversation.

Combinations

Valpolicella Ripasso Bosan Cesari is a full-bodied and structured red wine with good acidity and soft tannins. These characteristics make it a very versatile wine in terms of food pairings. A first pairing I suggest is with red meat dishes, such as a nice grilled beef tenderloin or a red wine braised beef. The structure of the wine goes well with the texture of the meat, while the acidity helps balance the fat. Another interesting pairing is with aged cheeses, such as a Parmigiano Reggiano or Pecorino Toscano. The intense, salty flavor of the cheese is balanced by the sweetness of the wine, creating a very pleasant contrast. Finally, Valpolicella Ripasso Bosan Cesari can also be paired with mushroom dishes, such as a porcini risotto or pasta with mushrooms and sausage. The earthy flavor of the mushrooms goes well with the red fruit notes of the wine, creating a very harmonious combination.
