Amarone
from Valpolicella is a typical wine from Veneto, produced with the natives varieties of the area: Corvina, Corvinone, Rondinella and Oseleta. The name Amarone, derives from the word “bitter”(amaro in Italian), created to distinguish it from the sweet wine Recioto from Valpolicella, from wich it has unintentionally origin. Legend has it that the Verona native varieties are not able to get fully riped, so winemakers tried to concentrate through the withering the compounds that grapes had managed to accumulate until the harvest. The Veronese native varieties also have the characteristic of having a structural conformation suitable for withering then the relative ease to dehydration when placed in a well ventilated and low humid environment. Today this is still a very delicate process and it is carried out with more confidence, utilizing environments created specifically for the withering called ""fruttai"": some wineries as Masi, Allegrini, Bertani, Zenato have developed some very interesting technologies for drying the grapes. The grapes in order to be regulated, cannot be crushed until 1st December following the harvest, and the resulting wine has to age in the cellar for at least two years before bottling. Romano Dal Forno together with Quintarelli are the most exclusive producers of the Valpolicella and renowned interpreter of the Amarone della Valpolicella variety. The turning point for Romano Dal Forno was when at 22 years old he met the master Giuseppe Quintarelli who inspired him about his concept of viticulture which was totally different to the one of the Valpolicella of that time. Back in those days the vineyard was seen as a grape 'machine' so it was put under stress to produce as much grapes as possible to the detriment of a quality product. Romano Dal Forno went against the trend by reducing plant yields and introducing varieties not local to his region, increasing the quality of its production exponentially. The company was founded in 1983 with difficult beginnings, but with the tenacity and perseverance typical of Veneto people and with the help of his sons, today the company manages 25 hectares of vineyard in one of the most traditional and most suitable land for wine-growing in the Valpolicella area and produces 45,000 bottles of incredible fine wines.
