Contessa di Capra is a typical Piedmontese cheese produced in the provinces of Asti and Alessandria. Goat's milk is used for the production of this cheese, it is considered a short-ripening cheese, it has a soft and moist paste, with increasing ripening (over 20 days) it has a wonderful smell. The rind forms after the first few days of ageing, it is white and wrinkled, the paste is creamy and white in colour. it is a soft fat cheese made from goat's milk, it has a medium aromatic intensity that becomes high with ageing.
