Burrata: properties and where to buy it online

Burrata is a curd cheese produced mainly in southern Italy; however, the real burrata comes from Andria, more precisely from Minervino Murge. This fresh cheese is protected by the PGI mark, which establishes the exclusivity of the product's production area, which is inextricably linked to the country of origin in terms of quality and organoleptic characteristics.

The PGI mark extends the geographical area of processing, production and packaging of burrata to the entire territory of Puglia.

Burrata looks very similar to buffalo mozzarella on the outside, but on the inside it contains a filling of cream and pasta filata, better known as stracciatella.

This fresh, soft and tasty cheese can be eaten cold, together with salads and Parma ham, or it is an excellent ingredient for other recipes.

The origin of burrata

Burrata has a special origin: it was born as an experiment and its history is linked to a weather event in the mid-1950s.

The inventor of burrata was the cheesemaker Lorenzo Bianchino, who had great difficulty transporting fresh cheese in 1956 due to heavy snowfalls.

Bianchino, who was already an expert in preserving butter in manteche, tried to apply the same technique to preserving stracciatella. The technique was to preserve the dairy product in a spun paste of the mozzarella type, like the butter manteche made at the Masseria Piana Padula where Bianchino worked.

The product was an immediate success and became a symbol first of the town of Andria and then of the whole of Puglia.

Burrata is still one of the most famous dairy products and is exported abroad.

Burrata characteristics

The burrata has a round shape, with the top resembling a sack. The top must be tied with food-grade raffia. The typical weight of the burrata pugliese is between 100 g and 1000 g and must also be very precise in terms of consistency and shape.

According to the National Organisation of Cheese Tasters of Italy (ONAF), Burrata:

  • creamy stracciatella has to be present when cut;
  • the internal threads must have a variable size
  • The aroma should have hints of fresh or cooked milk, butter and cream.

The milk must have certain characteristics as defined in the specification, which regulates the bacterial load present. Pasteurisation is carried out at 72 °C for 15 seconds or with another time and temperature combination that achieves an equivalent hygienic effect.

The cream for the filling may be packaged pasteurised or UHT provided it meets the microbiological parameters laid down in the specification. Pasteurisation can be carried out in two ways:

  • Temperature at 75° for 40 seconds when the fat content is between 10-20%,
  • Temperature at 80° or higher for 20 seconds if fat content is 20% or more

The taste of the burrata casing is similar to that of mozzarella, fresh and tart, while the filling is creamy and reminiscent of cream.


Burrata Calories

Burrata has a relatively high calorie content, about 450 kcal per 100 g of the product; it also contains 20% saturated fatty acids, similar to mozzarella.

However, Apulian burrata also contains some important nutrients that should not be underestimated: It contains a lot of calcium, about 329.0 mg per 100 g of product, and 118.0 mm of phosphorus.

It should be noted that this pasta filata cheese contains a lot of lactose and is therefore not suitable for people with intolerances.

As it is very high in calories, it is recommended to consume the cheese in small quantities, perhaps preferring to eat it in small portions or with the family. The recommended ration is 50 g per person.

Burrata in pregnancy: Is it OK to eat it?

What is buffalo burrata?

Buffalo burrata (burrata with buffalo milk) is a typical cheese from the Campania region, but it can also be found in Puglia and other regions; the production area includes the provinces of Naples, Caserta and Salerno.

It is very similar to the Burrata from Puglia, but is made from buffalo milk.

The shell of the burrata looks like buffalo mozzarella, but inside, the butter or cream centrifuged from the whey contains buffalo shavings.
