Aged Italian Cheeses - Rocca Toscana Cheese Buy Online.

Aged cheeses are divided in long- aged ones, when the aging is less than 180 days, and middle-aged ones, when the aging goes from 60 to 180 days. Most of the time these cheeses have a firm pastry dough and a thick crust, together with strong and distinctive aromas. Aged cheeses are produced all around Italy, especially in the northern regions, where the production of these cheeses is well-established, mainly in Lombardy and Piedmont mountain pastures. Pecorino cheeses are very famous as well, made with sheep’s milk, especially the ones from Tuscany, Rome, Sicily and Sardinia. Usually aged cheeses are served with elaborate dishes, as stews, polenta and other traditional dishes. Parmigiano Reggiano is considered the king of aged cheeses, whose aging could even last 60 months.


Rocca Toscana Formaggi is a young company, born in October 2015, but with over 60 years of experience in the food sector of the Toscana Canti family (already operating with the company Canti sas-srl and Canti & Rossi srl, respectively, since 1956 and 2004), and the incomparable skill of the cheesemakers of the prestigious Spadi di Roccastrada dairy, of which Rocca Toscana Formaggi is the current manager. For years now the Canti family has been producing and refining pecorino cheeses that are produced according to their own recipes by carefully selected dairies: the further step taken with Rocca Toscana Formaggi was to produce them directly, signing an agreement with the Roccastrada Dairy, known to experts in the sector for the great quality of the product.
